Meatloaf

Here's my famous meatloaf recipe, it's VERY good.

Ingredients
  • ground meat (I usually use what's on sale - 1 package beef and one pork is ideal)
  • 4 slices bread, torn into small pieces
  • 2 carrots, chopped fine (I use a half bag of baby carrots)
  • 2 celery stalks, chopped fine
  • 2 onions, chopped fine (or 1 big one)
  • 1/2 cup parsley
  • 2 cloves garlic, minced (or 2 tablespoons powder)
  • 2 teaspoons mustard
  • 1/2 cup ketchup
  • 1 tablespoon salt
  • 2 teaspoons pepper
  • 1 egg
DirectionsMix everything together in a huge bowl using your hands. Transfer the mixture to two loaf pans or one huge one. The glaze sounds gross but it's the best part, you must do it.

Brush with a glaze made up of:
  1. 2 tablespoons brown sugar
  2. 1/2 cup ketchup
  3. 1 teaspoon mustard
Bake in oven at 375 degrees for about 1.5 hours or until done.
